• 1 whole chicken or 4 bone-in chicken breasts

• 8 cups of chicken broth (homemade or low-sodium store-bought)

• 2 tablespoons olive oil

• 1 large onion, diced

• 3-4 garlic cloves, minced

• 3-4 carrots, peeled and sliced

• 3-4 celery stalks, sliced

• 1 bay leaf

• 1 teaspoon dried thyme

• 1 teaspoon dried parsley

• Salt and pepper to taste

• 1 cup noodles (egg noodles or your preferred type)

• Fresh parsley, chopped (for garnish)

• Lemon wedges (optional, for serving)

Instructions:

1. Prepare the Chicken:

If using a whole chicken, place it in a large pot with enough water to cover it. Bring to a boil, then reduce heat and simmer until the chicken is fully cooked, about 45-60 minutes. Remove the chicken from the pot, let it cool, then shred the meat, discarding the skin and bones. Strain and reserve the cooking liquid as additional broth.

If using chicken breasts, boil them in a pot until cooked through, about 20-25 minutes. Remove, cool, and shred.

Make the Soup:

In a large pot, heat the olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes.

Add the garlic, carrots, and celery, cooking for another 5-7 minutes until the vegetables begin to soften.

Pour in the chicken broth (including any reserved broth from cooking the chicken) and add the bay leaf, thyme, parsley, salt, and pepper.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, until the vegetables are tender.

3. Add the Chicken and Noodles:

Add the shredded chicken to the pot.

Stir in the noodles and cook according to the package instructions, usually 7-10 minutes, until they are tender.

4. Serve:

Remove the bay leaf before serving.

Ladle the soup into bowls, garnish with fresh parsley, and serve with lemon wedges on the side if desired.
